5. Makhana gravy
Makhaana gravy, also known as Phool makhana curry is a rich Indian dish with the right amount of everything. To prepare this, tomatoes, green chillies and ginger are blended, and cook until tender. Malai/heavy cream is added and stirred for 2 minutes. When the texture turns into a thickened orange paste, Makhanas or lotus seeds are added and sauteed for 2 more minutes. This dish is best served with buckwheat (kuttu ka atta) chapatis or pooris.
6. Aaloo Bonda/ Aamras Aloo
Aloo Bonda or Farali aloo bonda is usually small lemon sized balls of mashed potato that are dipped in a watery paste of buckwheat flour and grounded peanut with minimal spices and condiments. These potato balls are then fried in oil until they leeway golden brown colour. Since this snack is usually prevalent in South India. It is best served with curry leaves tempered coconut chutney to make a savoury snack for Navratri fasts.
7. Sabudana Khichdi
Sabudana is small translucent tapioca pearls that are usually feasted around the fasting season. To prepare clump-free sabudana khichdi, these sabudaana globules are soaked in water and then later tempered in finely chopped tomatoes, green chillies, ginger, curry leaves and finely chopped fried potatoes. The recipe is the same as preparing poha or pulao, just with fewer ingredients and spices.
8. Badam Thandai
Badam thandai is probably the healthiest beverage to consume during Navratri fasts in India. To prepare this healthy drink one needs to grind and powder ingredients like cardamom, fennel seeds, seedless dates, almonds, walnut along with sugar and blend these well with a glass of chilled milk. This drink is both refreshing as well as nutritious to alleviate your energy levels during navraatris.
9. Makhana/Sabudana Kheer
Makhana or sabudana kheer is a quick dessert for the people who keep Navratri fast as this dish has a very less preparation time compared to the normal rice kheer. This is because Makhana or sabudana kheer already thickens the milk. To make this, makhana and sabudana are stirred with cardamom and cashew until milk is poured. The sugar is added and this mixture is again cooked for 7 to 8 minutes before it's ready to serve.
10. Samak Rice Khichdi
Samaak or Barnyard Millet is often consumed during the Navraatri time in India, and is rich in digestible fibres, thereby serving as a fulfilling meal for Vrat. With a preparation time of 10 minutes, the process includes shallow frying green chillies, tomatoes, peanuts, cashews, ginger, salt and spices and potatoes which is later followed by adding the samak rice. After stirring for a minute or two, 2 cups of water is added. The rice absorbs water quickly and gets mushy. This dish is best accompanied with curd.
